Hello! My name is Salvatore Carta in @adelsa_artisan_design, I am a Sfoglino, pasta designer, pizza chef and baker. I consider myself a determined, dynamic, reliable and constantly evolving person. I am a highly organized and detail-oriented professional, I seek innovation in tradition. I willingly accept challenges in order to satisfy every single request of the customer. I love cooking, experimenting and enjoying good food, that's why I like my job.

Once upon a time... my story.
I am Italian and I have a long working experience: various circumstances in life have distanced me from my passion. Graduated in Economics and Tourism Business, I was a supervisor for almost 10 years of a company where the responsibilities were multiple. A few years ago I realized that my secret passion could not remain hidden so I completely changed my life in a short time. I had to start everything over by studying, first the English language and then obtaining a specific diploma in the White Art. My job initially was to create refined and artisanal baked products. Later I tried to make my dream come true in Sardinia, in vain, so in 2020, in the midst of the Covid-19 pandemic, I moved with my family to London. In the space of a few months we managed to open our fresh pasta, pizza and baked products laboratory. In recent years I have taken training courses in Emilia Romagna and Sardinia to learn how to work fresh pasta from the most traditional to the most refined such as "Su Filindeu". I have become a Sfoglino in the world and I am proud of it. Why did we choose this name? Because being a small family business, we wanted to group all the components under a single name: Alessandro, Adelaide, Eleonora and Salvatore.

Our work is sacrificing but immensely satisfying, the best part of all this is knowing that people can always eat genuine products. We invest every day to make sure that the products we handcraft are fresh and have the flavor you expect, the raw materials are all imported from Italy. We hold refresher courses on a monthly basis to always be at the forefront of the market. We invest every year to have technologically better machinery. This year our goal is to buy a professional electric oven to start the production of our artisan panettone.
